The hardest part about living so far from home is when the holidays roll around. Easter in Texas usually meant dyeing Easter eggs, going to our home church with family, and then eating a big lunch together with family and friends. Sometimes confetti eggs were involved too! Although we missed being with family for Easter this year, we still celebrated in a somewhat Texas style. Kyle and I woke up early and went to church, and then made an Easter lunch feast for four. I made my first brisket (sooo good), Kyle made roasted garlic asparagus, and we had baked potatoes with all the fixings! We invited a couple of our friends from church and I was able to finally use nice napkins from our wedding gifts :). As our tiny apartment only has a table that technically seats two, we dragged our desk chair out, and then Kyle sat on boxes as the fourth chair. Haha! The weather was especially beautiful yesterday, so we opened the windows and shared Easter lunch together. How did you celebrate Easter this year?
