Last weekend, we discovered two great things in our hood: Baklovah Bakery and the international food market right next door. I never thought I would find anything like either of those two things in San Antonio, but, despite my complaining and lack of faith in the diverse food options here, lo and behold, there is Baklovah Bakery!
They have so many good things there that I can't wait to try them all (slowly, of course and over time...). They have 3 or 4 different kinds of baklovah, turkish delight, cheesecakes, cookies, Turkish coffee, cakes, and so much more! After visiting the bakery, we headed over to the grocery store next door and guess what they sell...
FRESH. PITA. BREAD. for only $1.00!
Y'all, I haven't been so excited in awhile. They had so many different kinds of pita bread too. Naturally, we bought some immediately and then headed home for a mediterranean inspired dinner, which included this mezze platter.
What's a mezze platter you ask? Um, only the best way to start a party and feed a crowd (or you know, just the two of you!). It's a platter filled to the brim with goodies like hummus, tzatziki, pita, stuffed grape leaves, olives and more. It varies by region but is traditionally served in areas like Israel, Lebanon, and Greece.
If you want to upgrade your cheeseboard to something a little healthier, you need a mezze board in your life.
With homemade roasted garlic hummus, of course.
One thing that I almost never buy anymore is store bought hummus. 90% of the time, I make it at home. It's so easy and tastes so much better, plus I know exactly what's going into it. When I have the time, I will roast some garlic to go into it too because if you are a hummus fanatic like me, then you know that roasted garlic hummus is arguably the BEST type of hummus out there.
Roasted Garlic Hummus and a Meze Platter for Two
Ingredients
- pita bread, store bought
- 1/4 cup tzatziki, store bought
- 1/2 cup tabbouleh, store bought
- 1/4 cup feta, cubed
- 1/2 cucumber, peeled and sliced
- 1 - 2 medium radishes, sliced
- fresh mint, for garnish
- fresh parsley, for garnish
- 1/2 cup roasted garlic hummus (recipe below)
small handful of each (you can get most of these at the olive bar at your grocery store!):
- marinated artichoke hearts
- roasted red pepper
- jalapeño stuffed olives
Directions
On a medium sized platter or board, arrange all of the ingredients. Let sit out on the counter for 30 minutes before serving to allow to come to room temperature.
Roasted Garlic Hummus
makes about 2 cups - save leftovers in the refrigerator!
Ingredients
- 1 head of garlic
- 1 15 oz. can (about 2 cups) chickpeas, rinsed and drained*
- 2 tbl tahini
- 1/4 cup olive oil
- 1/4 cup room temperature water
- 1/4 tsp cumin
- 1 tsp salt
- 2 tbl fresh lemon juice
Directions
Slice the top (about 1/4") off the head of garlic to expose the tops of the garlic cloves. Wrap in foil and drizzle with a few teaspoons of olive oil. Roast in a 400°F oven for 35 - 45 minutes or until soft and golden. Let garlic cool slightly before pushing the individual cloves out.
In a food processor, combine the roasted garlic and the rest of the ingredients. Pulse until completely smooth. If necessary, add a little more olive oil (a teaspoon at a time) to get desired consistency.
*If you want super duper smooth hummus, peel each and every chickpea from its outer shell after rinsing them. If you don't want to do this, you will still get really good hummus, it just might not be as silky smooth!
