Happy New Year!
Kyle and I rang in the new year with my brother and sister, curled up on the couch, watching Wreck it Ralph and the NYE NYC countdown on TV. Last year we spent NYE at a friend's apartment about 40 blocks from the Time Square ball drop countdown, so it was a little weird not being in NYC this year. But I am definitely glad to have spent it with family instead! : )
2015 was an eventful and fast-paced year. We officially moved into Manhattan from our Yonkers apartment, we took our first European trip together (hi Paris!), I was blessed to begin my new job at my dream company, and I started this little blog of mine, which has fully allowed me to pursue cooking and photography in a challenging and purposeful and fulfilling way. Thanks for sticking around, those who read my blog! (Seriously thank you!!) It was a great year!
I'm not entirely sure what all 2016 will bring, but I do already have travel plans in mind, new recipes to try, and new restaurants/coffee places/museums I want to explore in the city. I hope your 2016 is full of hope and love and new adventures!
Mini Vanilla Sprinkle Cake
Ingredients:
- 7 tbl. flour
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- pinch of salt
- 3 tbl. vegetable oil
- 1 large egg
- 1/4 cup sugar
- 2 tbl. whole milk
- 1 tsp. vanilla
- 1/4 cup sprinkles
for the frosting:
- 1/2 stick butter, softened
- 3/4 cup powdered sugar
- 1 tsp. vanilla
Directions: Preheat oven to 350. Prepare a small loaf pan with pam spray or use parchment paper to line. Whisk together the flour, baking powder, baking soda, and salt until combined. In a separate bowl, mix the oil, sugar, egg, and vanilla. Add dry ingredients to the wet ingredients and whisk together until fully combined. Pour into prepared pan, and bake for 12-16 minutes, or until a toothpick inserted in middle comes out clean. Cool in pan for 10 minutes then flip onto cooling rack until completely cooled.
for the frosting: Combine all ingredients in a small bowl, and beat vigorously with arm strength (or with a mixer) until creamy.
for assembly: Cut out three small circles from the loaf pan with a cookie or biscuit cutter. Layer with frosting and sprinkles on each slice. Serve!
