What's weird about this time of year is all the back-to-school commercials start playing and all of the stores have back-to-school sales, and for those of us who graduated and no longer are going back to school, it can be kind of sad. No new school supplies, no new clothes, no new teachers to annoy. Well I'm only sad for about 1 minute and then I remember how much fun being an adult is, like for real, because I get to work a job I love, make $$$ (actually more like $), travel, grocery shop on my own, clean (or not clean) my own place, and make adult decisions about my future!!! Also, I can stay in on a Friday night and not have to worry about how lame I am (Kyle and I stayed in last night, and watched a pre-recorded episode of America's Got Talent...yay married life! <3). Now that I think about it, I don't really miss being a kid, or being in high school, or even college at all. And you shouldn't either because we should all live in the moment. Now, make some muffins!!
I love these mini muffins, because they are perfect to freeze half of them, and/or leave them out and have breakfast ready for throughout the week. They are super moist, not too sweet, and the Nutella adds a hint of chocolatey-goodness. I was tempted to smear more Nutella on them when they came out of the oven, and I think that would be totally okay if you did.
Directions:
Preheat oven to 350. Grease a 24 count mini muffin pan and set aside. Mix flour, baking powder, baking soda, salt, and cinnamon in a large bowl. In a different bowl, stir together mashed banana, egg, melted butter, sugars, and vanilla. Combine wet and dry ingredients, and pour evenly into greased muffin tin.
Spoon small dabs of Nutella on top of muffin batter. Swirl with toothpick. Bake for 12-15 minutes, or until a toothpick inserted in the center of the middle muffins comes out clean.
Banana Mini Muffins with Nutella Swirl (makes 24 mini muffins)
Ingredients:
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 overripe bananas, mashed
- 1/2 teaspoon salt
- 1/4 cup brown sugar
- 1/4 cup white sugar
- 1 large egg
- 1/3 cup butter, melted
- 1/2 teaspoon vanilla
- 1/4 cup Nutella
