This is Kyle's absolute favorite dessert for me to make. I usually only make it on his birthday (he's a pie guy not a cake man), but last Saturday (3/14) was National Pi day (3.14), so...the once-a-year anticipated cinnamon apple pie was made early. As today is the first day of spring and NYC is expected to get 3-5 inches of snow (!!), this may be the perfect comfort food to make this weekend.
Cinnamon Apple Pie
Ingredients:
- 1-9 inch pie crust
- 1/2 cup butter
- 2 tbl. flour
- 1/4 cup water
- 3/4 cup white sugar
- 1/2 cup brown sugar
- 2 tsp. cinnamon
- 6-7 Granny Smith apples, peeled, cored, and sliced
Directions: Pre-heat oven to 425. Melt butter in a saucepan. Add flour and slowly stir to thicken. Add water, both sugars, and cinnamon. Reduce heat and simmer for a few minutes. Place the bottom crust in your pan and fill with apples. Cover with the second crust (I sliced mine to make a lattice crust, but that is completely optional). Slowly pour the cinnamon sugar and butter liquid over the top of the crust. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees. Continue baking for 40-45 minutes, until apples are soft and the whole house smells like cinnamon-appley goodness.
