Happy Memorial Day weekend! I am in Dallas for the next couple of days with Kyle and a couple of friends for an optometry event, so us girls are about to go eat/shop/explore the area while the guys perform free vision screenings. Everybody wins! But first, I wanted to pop in and share this super easy recipe that will make you feel like you are beachside even if you are stuck indoors.
I always assumed crab or lobster rolls would be difficult to make, but in fact they are so easy and the ingredient list is minimal. We used to go to Luke’s Lobster in the northeast when we lived there and get their $17 lobster roll. It was WORTH IT. And absolutely the best.
Recently when we had our layover in Philly we stopped at a Luke’s Lobster there for dinner and got the crab rolls. It instantly escorted me back to the beach and reminded me of a weekend in Cape Cod, even though I was wearing a thick coat and boots at the time.
If you need a beach getaway this weekend too, and want an alternative to grilling, try these crab rolls. The beurre blanc sauce sounds fancy but it is actually just dressed up butter and an alternative to mayo. The recipe can easily be doubled or tripled too!
Beurre Blanc Crab Rolls
Serves 2
Ingredients
for the beurre blanc
- 2 tbl vinegar
- 2 tbl white wine
- 2 tbl chopped shallots
- 5-6 black peppercorns
- 3 tbl butter
- 4 oz lump crabmeat (canned, fresh, or frozen)
- 2 hot dog buns, sliced on top down the middle
- Room temperature butter
- Chives for garnish
- Lemon wedges, for serving
Directions
Combine vinegar, wine, shallots, and peppercorns in a small saucepan. Bring to boil, and then reduce liquid by half. Add one tablespoon of butter at a time, whisking after each addition until fully incorporated. Strain through a fine mesh colander.
Add lump crab meat to sauce, and stir to coat and reheat the meat.
Butter the outside and inside of the hot dog buns. Place on a baking sheet and broil for 2 - 3 minutes or until golden brown and butter is melted.
Fill buns with crab mixture and garnish with chives. Serve immediately with a lemon wedge.
