Happy Friday! We are almost completely unpacked in our new apartment, and it is coming together quite nicely. Now that I'm looking at everything in our current space, I honestly have no idea how we fit it all in our apartment in NYC. It was twice as small as our new apartment, literally.
Besides the one issue of the upstairs neighbor who was very loud (i.e. playing loud music until early morning hours without stopping) the first week we moved in, but since now has stopped, we really are loving the new space. I haven't really ever felt that way about an apartment before, and I think I'm becoming more of a homebody because I never want to leave, lol. Or, I never need to leave. We have a gym right across the street, a Whole Foods within walking distance, and a bunch of shops/restaurants nearby so everything we need is right within reach! I definitely want to explore more of Austin though, because there are so many cool places to check out that we haven't even tapped into. Maybe we will do some exploring this weekend? Kyle starts school next week, so things will once again be busy and back to reality.
If you live in Texas this post is a no-brainer, but if you don't (hi New York friends!), you may not have ever had a breakfast taco before. I remember talking with some born and raised Northeast peeps once and they thought eating tacos for breakfast was kind of weird. Well, I personally could eat tacos every single day, for every single meal*. All you need are some tortillas, scrambled eggs, and a variety of fillings and you have one of the easiest (and incredibly delicious) breakfasts out there!
*We're having fajita tacos tonight!
Breakfast Tacos, Three Ways!
Ingredients:
- Chorizo, Egg, and Jalapeno
- Bacon, Egg, and Avocado
- Potato, Egg, and Avocado
Directions: Fill a large tortilla (I prefer flour) with above ingredients. Top with pico de gallo and/or salsa and a squeeze of lime juice. Optional and not pictured: top with cheese of your choice.
