Right now I'm wearing my Spurs t-shirt and have been reminiscing on Spurs memories ever since I heard the news earlier this week that Tim Duncan is finally retired (!!!). And of course he would do it only as Timmy would do it; after the season was way over, quietly and humbly and without a big show. I'll never forget when they won the NBA championship in 2003 and my dad was so excited he drove my brother and me in Dean (our green truck), loaded our three dogs in the back, and drove up and down our quiet country road yelling and honking with the windows down. I'm pretty sure we got ice cream at Sonic or McDonalds or something afterwards.
Then, there was the 2014 championship when we had only been living in NYC for a few months, and I was surrounded by Knicks fans at my office. I had almost daily heated conversations with the IT guy about the Spurs, and how they were my favorite team ever because they simply played good basketball, without the showiness and the slam dunks and the attitude. We made a bet that they wouldn't win that year, and THEY DID. I was never a prouder Texan, and wore my new Spurs championship tee proudly that next casual Friday.
The rest of the week has been spent still settling in, figuring out this weird transition period, running errands, and lots of Pokemon Go in between. Seriously I cannot believe the obsession surrounding this! Every time I go walk outside I can just tell who is playing. A bunch of small groups huddled in 2-3, pure joy highlighted on their faces. The other day Kyle caught an Exeggcute on my leg while I was driving!!
I wrote about it a bit on Instagram, but I am really planning to get back into blogging more consistently again. I've been missing that creative part of my life, and as we get more settled I want to do so much more with it. So stay tuned for some more I hope. I simply love peach season, and if you've been reading this blog for awhile you know I have a thing for scones. These came together in no time, and weren't too sweet. If you don't have whole wheat flour just sub all-purpose!
Happy weekend lovelies!
Peach, Blueberry, and Nutmeg Whole Wheat Scones (makes 8-10)
Ingredients:
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/2 tsp. salt
- 1/2 cup white sugar
- 1/2 tsp. nutmeg
- 1 tbl. baking powder
- 6 tbl. very cold butter, diced
- 2 eggs
- 1/3 cup buttermilk
- 1 tsp. vanilla extract
- 1/2 cup fresh diced peaches
- 1/2 cup fresh blueberries
Directions: Preheat oven to 375F. Lightly grease a baking sheet and set aside.
In a large bowl, whisk together all of the dry ingredients. Cut in the cold butter, using either a pastry blender or two knives. In a small bowl, whisk together the milk, vanilla, and eggs.
Make a well in the center of the large bowl, and pour wet ingredients into the dry. Combine with a fork until just mixed. Fold in the peaches and blueberries until combined. Dough will be very sticky.
Using a 1/4 or 1/3 cup measurement, drop dough in rounds onto prepared pan. Bake in preheated oven for about 20 minutes, or until golden. Let cool for a few minutes before serving!
