I'm sitting here drinking my coffee at home while two eggs sit in boiling hot water on the stove. Once they are done I plan to sprinkle fresh sea salt and pepper and eat with a slice of cheese. I love when I get up early enough to make breakfast at home!
Anyway, this week has already been pretty hectic and it's only Wednesday. This weekend went by fast and we were so disappointed after walking a dozen blocks through Central Park, my new camera at the ready, to find that all of the cherry blossoms have already fallen and moved on. They don't last very long! At least we got to see them when they were at their peak, a couple of weeks ago. Until next spring.
On Monday I had an interesting experience when I signed up for a barre class through classpass, and while I hate it I always get a good full body workout, so I decided to sign up last minute, and assumed it would be like all the other barre classes (lots of squats and lunges and holding uncomfortable positions and trying not to sweat). When I showed up it was a full on ballet class! Everyone (except me) had on ballet shoes and some even unitards and even the 50/60 year olds were starting their workout stretches with the splits. I had no idea what I was doing and just tried to have fun with it, but it was a small class and the instructor kept saying all of these different positions and movements in French and I looked like a duck among swans. I also thought it was only 45 min but it was 1 1/2 hours, and at the end we broke up into groups to perform this choreographed dance to music which involved spinning a few times. It was humbling to say the least, and I have an even bigger appreciation for dancers and specifically ballet. I don't think I'll be going back anytime soon, hehe.
Lately I've been very drawn to bright and colorful fruity things, and maybe this is my subconscious telling me to get excited for summer or whatever. This fruity ricotta bowl was delicious, and the fruit can easily be swapped out for whatever you have at home.
Ricotta Fruit Breakfast Bowl
Ingredients:
- 1/3 cup ricotta
- small handful of berries
- diced mango or bananas
- sprinkle of sea salt
- dried raisins
- drizzle of honey
- sliced almonds
Directions:
Spoon ricotta into side of a small bowl, and sprinkle with a little bit of sea salt. Arrange fruit on the other side of the bowl. Top with dried fruit, honey, and sliced almonds.
