How was your Halloween? Are you eating all the leftover discounted candy today and all this week? I haven't had any candy surprisingly but I did have a feast of what might be two of my favorite foods: pizza and chocolate chip cookies.
Last night we did not dress up, but my brother and sister came over and we had a chill night-in. I made two homemade pizzas, using Jim Lahey's no-knead pizza dough recipe, and OMG the crust was mind-blowing. It was so easy and led to a crispy-chewy crust that was the perfect bed to all the toppings I threw on top. It definitely is the new pizza dough winner for when I make pizza at home. We also had chocolate chip cookies (not homemade, because buying the Pillsbury value-pack was just so much easier and after waiting all day for the pizza dough to rise the last thing I wanted to do was whip out more flour for cookies) and then watched a (not) scary movie! A couple of friends from church came over and brought their little girl, who was dressed up as Elsa and was the cutest princess ever. I sent her home with chocolate chip cookies since we didn't have candy, but I think she was okay with that.
And now there is glitter from her costume all over our couch and floor, but most of it is gone now...
Now that Halloween is over, it's kind of a bummer because it's only Tuesday and we still have a full week of work ahead. I'm coping by taking Sibbie on long walks to the dog park (where she is meeting new dog friends daily, and even met her future boyfriend although I think he was a bit too old for her, another husky named Blue), and planning new fall recipes to make now that it is already November (!!). Seriously though where did this year go?
The other day I was making this pico de gallo and decided to film it! I make this frequently, and love to eat it with chips, put it in my salads, or top any Tex-Mex inspired dinners with it. It's one of those staples that everyone who loves Tex-Mex/Mexican food should know how to make.
Pico de Gallo
Ingredients:
- 3 medium tomatoes (I used roma), chopped
- 1 onion, diced
- 2 small jalapenos, diced small
- large handful of cilantro, chopped
- juice of half of a lime
- salt to taste
Directions: Combine all ingredients in a medium bowl. Serve immediately!
