This week has been probably one of the slowest weeks ever. The highlights of my week have been watching DWTS both nights it aired, the Republican debate, and the new yoga mat I bought for my yoga class which is taking place at work, during the lunch hour. Last time I did yoga at work it was one of the most strange and inappropriate things ever, I mean of all of the employee activities to do together, yoga must be the most awkward, right!? I guess I haven't learned from last time, and am doing it again but with high hopes that it won't be as weird. What else is new in life? Oh ya, only 24 hours until the weekend!!
Pizza salad may be an oxymoron of sorts, but I love oxymorons, and pizza, so here is my version of a healthy pizza salad!! The flavors of regular pizza are here, but without all of the grease and fat. (Why am I concerned with grease and fat all of a sudden now that summer is over? I don't know.) It's basically a caprese salad, but with smoked pepperoni slices and homemade toasted Italian baguette breadcrumbs. As pizza fanatics, Kyle and I definitely approved of this "pizza". Heirloom Tomato, Mozzarella + Pepperoni Pizza Salad
Ingredients:
- 1 cup heirloom cherry tomatoes, sliced in half
- 1 cup fresh mozzarella
- 1/2 cup smoked pepperoni
- 1/4 of a loaf of fresh baguette, sliced small
- olive oil for drizzling bread
- fresh basil for topping
- vinaigrette dressing
Directions:
for the croutons: Preheat the oven to 400. Slice 1/4 of the baguette loaf, and chop into smaller pieces that are crouton-sized. Drizzle with olive oil and bake in oven for 10 minutes, or until crunchy.
for the salad: Combine all ingredients together and drizzle with olive oil vinaigrette. Top with fresh basil!
