This has been one of those I-hate-New-York weeks. Between almost stepping on a dead rat on the sidewalk, the apartment next to ours catching on fire (I don't think anyone was hurt), and our neighbors' bass playing at literally all hours of the night more than it normally does, I am going insane!! Plus, it's been so stuffy and hot in our apartment, as well as on my daily commute, that I am having to shower like three times per day. You can imagine my excitement when I woke up this morning to the soft pitter patter of rain outside my window. I think it will finally cool down, and maybe stay that way, which will be such a nice change from all the humidity. I feel like the weather starts to cool when Starbucks releases its Pumpkin Spice Latte. Fall officially starts rolling in its cooler weather when Starbucks says it's times to.
As work has been a bit hectic this week (even with the four day work week!), I have been running in the mornings and then channeling my stress into cooking or baking the moment I get home. It's been a great stress reliever - although I hate having to hand-wash all the dirty dishes that pile up afterwards.
While we were in Vermont we picked up fresh peaches and strawberries and made breakfast parfaits before our hike. The produce there is absolutely amazing! We also went to a local grocery store where I picked up lemon flavored yogurt and fresh granola. Since summer still seems to be lingering around, these parfaits are a refreshing breakfast option or snack!
Strawberry, Peach and Lemon Parfaits (serves 2)
Ingredients:
- 2 cups lemon yogurt
- 1 cup fresh strawberries, sliced in half
- 1 cup fresh peaches, sliced
- 3/4 cup granola
- local honey for topping
Directions:
Using two clear glasses and a spoon, layer the ingredients evenly, starting with the yogurt. Top next with a thin layer of granola, and then half of the peaches in each glass. Repeat with the yogurt, granola, and then half of the strawberries. Top with more fruit and a drizzle of honey.
