Fig, Peanut Butter, + Honey Toast

A good peanut butter and jelly is one that brings back memories. For me it’s like a flash of multiple images: being a kid with scuffed up knees and thick bangs, eating a pb + j my mom made me as a snack (crusts removed!) or when I worked at Sonic in high school and eating a pb + j before work because it would fill me up and then I wouldn’t have to eat greasy fries, or in college it was a nice change from ramen or dorm food. Most recently, I think to when we first moved to New York, and I had been eating Peanut Butter and Co. peanut butter for years and remember reading the back of the label that said it came from a tiny sandwich shop in NYC. So, when we moved, I knew we had to visit it! So, we went, took 2-3 trains to get there from Yonkers, and it was one of the first NYC places we went to. A peanut butter and jelly sandwich shop...I believe I got a PB + banana, Kyle got something with marshmallow in it, and voila! A legitimate NYC experience.

Figs are one of the most beautiful fruits, and I have been seeing them all over my instagram + blog feed all summer. Well, right now, it is definitely fig season, so it is the perfect time to try the fanciest + prettiest + most flavorful pb + j-tasting toast. I also added honey, to bring out the sweetness in the figs, and it was amazing! You can also find this recipe on Food52.


Fig, Peanut Butter, and Honey Toast

Ingredients:

  • 3 fresh figs
  • 2 tablespoons favorite peanut butter
  • 2 slices whole wheat or seeded bread
  • 2 teaspoons honey

Directions:

Spread each slice of toasted bread with creamy peanut butter. Top with sliced ripe figs and drizzle with honey. Enjoy!
